The heritage of Lodz of four cultures includes not only impressive factory buildings and beautiful architecture of tenement houses, but also something that we encounter every day - Lodz cuisine. Even though the residents of the Promised Land associate the cuisine with only a few popular dishes, it is worth taking a closer look at its multicultural richness. Included here are recipes for more than thirty delicious dishes derived from German, Jewish, Russian, and Polish cuisine, eaten in a pre-war Lodz. Starting from modest and poor meals served in the homes of factory employees through seasonal dishes from rural cottages to the sophisticated delights from factory owners' tables. Some of them are well known and are willingly cooked until today, such as zalewajka or prażoki, and other dishes, like Russian razsolnik or German wellfleisz, which we now rediscover. All proposals have been developed based on traditional recipes by top chefs from Lodz who provided them with modern character.
